Aloha!

In July, Robert and I celebrated our 5th wedding anniversary in Hawaii! It was SO BEAUTIFUL! Everyone told us how nice it was but I really think it is one of those places you have to see to believe! Once i figure out how to post my Flickr account to my page, you will be able to view pictures. We went to Ohau and The Big Island. We took a hleicopter ride over flowing lava, toured a Kona coffee plantation , and went snorkeling.

Sorry again for the lack of posting. Everytime I think about updating, I am at work. I will post pictures of some of the below topics when I am on the other computer.

Cakes, Cakes, and more Cakes!!!

Things have been good around the Sterner house. I have been taking the Wilton Cake classes at Michaels and really enjoying myself. I start Course 3 on Wednesday. So far I have made several cakes and about 6 dozen Elmo cupcakes. They all turned out well. Some were easier than others. This last week we did the basketweave with Royal Icing flowers. The flowers I did at class tunred out good but the ones I tried at home didn’t work. I am not sure if my icing was bad or what. I have volunteered to make a birthday cake for my manager at work later this month. I am pretty nervous about it because there is a local bakery that does pretty cakes and I don’t want to be compared to it. We will see how it turns out.

Robert is doing well also. He is enjoying not being in class. We just had a new addition to our family as well! Robert finally got his HDTV! I have to admit that it has been nice to have around. Movies are especially fun to watch!

October is a busy month! We are going camping in Huntsville, a football game in Austin, and a friends wedding. In November we are going to Marshall for my 5 year reunion. I CAN’T WAIT to see friends from school. Recently I have really been missing them. Luckily I got to talk to 2 of them this last week.

    Something to think about on the royal icing:

    If you beat too much air into the icing when you’re mixing it, it won’t stay up before it sets. I had that problem on my competition cake. If you’re using your stand mixer to make the icing, use the paddle beater rather than the wire whisk, and mix no faster than about 3 or 4 speed.

    If you’re using merengue powder, water, and sugar (rather than a just-add-water mix), I find it helps to beat the merengue by hand first with a wire whisk just to a loose froth (not a full foam), then add sugar with the paddle in the stand mixer.

    When you add color to the icing, mix it in with the paddle. Or better yet, fold it in by hand.
